I ordered their signature Bar au Beurre Blanc, served with small shells and potato mousse . The fish is likely sea bass (“bar”) , and the shells resemble clams, also known as coques in France. Paired with the smooth mashed potatoes and beurre blanc sauce, it’s a classic combination.

This “fish + shellfish + purée + beurre blanc” combination, elegant and meticulously cooked and layered, is widely considered a classic of French cuisine. Ideally, fish with a delicate white flesh, such as sea bass or cod, complement the emulsified butter sauce beautifully.

Taste and flavor memory

Visual and first bite impression : simple and elegant, the fish skin is slightly golden, the mashed potatoes are as fine as mousse, and the shells are arranged rhythmically but the portion is indeed not large.

The shell mouth experience : slightly crisp and bouncy, with a clear seafood flavor, which instantly reminds people of the familiar taste of clams and blood clams.

The fusion of mashed potatoes and scallops : the mashed potatoes are soft and the scallops are slightly crispy. The taste contrast after mixing is very wonderful, and the umami flavor is fully integrated, making people feel that the level of level is elevated.
